Somosa
A crispy fried snack with some filling like potatoes,onions,peas,cheese this is popular in the triangular one.
Ingredients:
Wheat Flour,Potato,Fresh Peas,Ginger Garlic Paste,Garam Masala,Salt,Oil,Water.
Making: In a bowl add 1/2 cup boiled potato add 1/8 tsp salt, 1/8 tsp haldi, 1/8 tsp red chilli powder,1/8 tsp garam masala.Mash and mix well.Roll the dough and fill the potatoCut the rolled dough into triangular shape, fold into samosa shape and deep fry.Serve hot with chutneys like tamato katchup and corrionder chutney
Punjabi kulcha
Kulcha is crisp as well as soft bread which is stuffed with boiled and mashed potatoes and spices
Making:Take a large bowl Add baking,powder, baking soda,oil and salt
in the flour and mix it well with your fingers to prepare a firm dough. Cover it with a damp cloth and keep it aside for the stuffing in the kulcha take the boiled potato and mash it in a bowl. Combine finely chopped onions and green chillies with mashed potato.Add chat masala, coriander leaves, red chilli powder and cumin powder in the mixture. Sprinkle salt and mix the ingredients with a spoon.Now pick the dough and divide in two equal portions.
Roll each into a ball and then flatten the ball using hand.Place a spoonful of aloo filling in the centre of the flatten dough and close using hand.Sprinkle some flour over it and roll it into a paratha.Take a non-stick pan add oil and heat it on medium flame.When bubbles start to rise in the oil place the kulcha in the pan for a minute.Now flip the kulcha so it cook till both sides turn crispy.Once done, serve hot with Chole with some onions add in tamarind water chutney.
Dal makhani
It is most popular dish in Punjab and available in every restaurant or hotels.It is now recognised as a quintessential Indian Dish.
Ingredients:1 Cup Sabut Urad Dal,0.25 Cup Rajmah,Salt as per required,Water,Ghee,Ginger (Chopped),Garlic (Chopped),Onion (Finely Chopped),Green Chillies,Red Chilli Powder,Tomato Puree,Coriander Leaves
Making : Soak dal and rajmah in water overnight.Wash dal and rajmah and Add in pressure cooker in 3 cup water till the dal is well cooked Remove from fire and discard the water.Now take karahi heat ghee and fry the chopped ginger, garlic and onion till golden brown add red chilli powder and fry add tomato puree dal till the ghee separates.Now add dal cook for a few minutes.Garnish with coriander leaves and serve hot with rotis or parathas.
Masala Dosa
Masala Dosa is crispy and crepe-like and is a very popular street food in India. Dosa is famous for its simple ingredients.It can be eaten as a snack, breakfast, or anytime.It is Originating in southern India since the 5th century AD
Ingredients: Mixture of rice flour,potato,curry leaves,lentils,methi (fenugreek)
Making:Add 1.25-1.5 cups rice flour,Pour 2.5 cups water and mix well must be smooth and evenly mixed into a thick battery that still flows. Pour batter into another bowl cover at room temperature either overnight or for about 9-10 hours. Once fermented add salt to taste and mix well.Now make the masala filling for masala dosa take some boiled potato mash it in bowl and add some haldi, red mirchi powder,some salt as per taste and mash it well for filling in dosa. Now heat the tava and heat up a small amount of oil.Take spoon spread Dosa batter in circular round Drizzle oil on top and sides and let one side cook.Take spoon of potato filling and spread on Dosa batter vertically so When browned, flip and cook the other side.Fold and serve hot with samber which is made by number of vegetables and with coconut chutney
